GUYOT WHITE 2020
Philosophy: To express the richness of a unique terroir in an elegant and subtle wine.
Origin: Grapes from very old vines, over 90 years old, in sandy soils of granitic origin and at altitudes above 500m.
Caste: Field Blend, with more than 20 grape varieties present, where Códega and Rabigato predominate.
Vinification: Manual harvesting in 20Kg boxes. Reception with total destemming, crushing, followed by cold maceration for 2 days at a temperature of 10ºC. Partial fermentation in 500 litre French oak barrels with indigenous yeasts and in stainless steel vats at a controlled temperature of 17ºC.
Internship: 500 liter French oak barrels for 12 months + 12 months in bottle.
Bottling Date: April 2023.
Tasting Note: Straw yellow colour with a crystalline appearance, aroma of ripe fruit with tropical nuances wrapped in light barrel toast that gives harmony and complexity. In the mouth it has a very fresh and unctuous profile, displaying a combination of fruit and spices with a crunchy acidity that makes it prolong.
